Breakfast Tacos
Good looking and easy to make breakfast.
Preparation time: 10-15 min
What's in it?
The core:
- corn tortillas - one blue, one regular
- scrambled eggs
- black beans
- sautéed spinach
- avocado
- salt and pepper
The optional extras. This is where you can get creative and add whatever you have on hand:
- one small yellow zucchini, thinly sliced and sautéed - it was it's last day, so I had to use it
- radish sprouts - I have a container of them and add them to almost every dish
- queso fresco, crumbled - last little bit from last time we made tacos
- fresh cabbage, thinly sliced - for the crunch
- slices of pasilla pepper - this one was very spicy... also see note below
It is easy and very healthy. A lot of the ingredients can easily be swapped with whatever else you have on hand - endless combinations are possible. You can turn it into more of an afternoon dish by substituting scrambled eggs with shrimp, fish or chorizo.
Note that corn tortillas are way better than flour ones, because they have their own unique flavor and texture. Ideally, I would buy fresh dough and make my own.
The taste was very fresh but it lacked a bit of character. Adding a bit of Cholula helped, but ideally I would make my own salsa or add more spices to the ingredients. I also forgot to add a squeeze of lime!
Note on the pepper
I buy it in Ralphs and there it's called "pasilla pepper". I am not sure if this name is correct though, because - according to Wikipedia - pasilla is a "dried form of the chilaca chili pepper", while this one is fresh and looks more like a poblano pepper. Go figure!
